Sweet Potato Bread

Today was the first big snow of the year and it wreaked havoc on the roads.  I was planning on going into the city for my last midwife appointment but we stayed home instead.  Zoe and I decided to do some baking today and we made this delicious loaf.  I added some white chocolate and skor bits and I think it made it even better.  This loaf is also surprisingly light.  Mmmm....I am going to go and have another slice.

Ingredients
adapted from Allrecipes

1 1/2 cups white sugar
1/2 cup vegetable oil
2 eggs
1 3/4 cups sifted all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup water
1 cup cooked and mashed sweet potatoes

Directions

1.Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.


2.Pour batter into greased 9x5 inch loaf pan (or 2 small loaf pans). Bake at 350 degrees F (175 degrees C) for about one hour.

  1. We've already gotten 10 inches of snow in the past week--not fun!
    This bread sounds great--I love anything with sweet potatoes in it!

  2. Sounds like a wonderful way to spend a snowy day. Love the idea of adding white chocolate and skor bits to the bread to make it even more decadent.
