Candied Yam Muffins

Ally was driving me nuts this morning.  She was bored and wanting attention and I was struggling to put the baby down.  Argghh...I would have Zoe asleep in my arms and just about to put her down and Ally would round the corner screaming.  This happened 3 times!  I tried explaining to her that if Zoe was asleep we could do something.  But alas...reasoning with a two year is sometimes a wasted effort.  Once Zoe was asleep I asked Ally if she wanted to bake or play and she wanted to bake.  That's my girl!  Here is the original recipe.  These muffins are delicious and sweet and fully of yammy goodness.  They are dense and moist and rose nicely. 



Ingredients

   4 eggs

  1 c. milk

   1/2 c butter

    1/2 c apple sauce

  3 c. sugar

  3 c. flour

  3 c. mashed, cooked yams

  4 tsp. baking powder

  2 tsp. cinnamon

  1/2 tsp. nutmeg

  1/4 tsp. salt

  1/2 c. chopped pecans

  1 c. raisins (soak in warm water)

 Directions

Have all ingredients at room temperature, cream butter, sugar and yams until smooth. Add eggs. Sift together all dry ingredients. Add milk slowly while stirring. Fold in nuts and raisins.

 

Pour in muffin tins, sprinkle with cinnamon and sugar. Bake at 350 degrees for 25 to 30 minutes.  Makes 36 muffins 2 pts each.
