Apricot Oatmeal Muffins


Check out my new muffin holder! It is awesome, I got it at Costco and I highly reccomend it.

I am in love with my new kitchen! I have an island and it makes baking so much easier. Ahhh....I could bake all the time. Another great thing about my house it is so much cooler! It is about 30 C out today and you can't tell in here, even with the oven on! These muffins are good very light in flavour. I am not a huge fan of the strong orange flavour so I reccomend omitting the rind. If you make the muffins let me know what you think.

Ingredients

2 cups all purpose flour
1/2 cup whole wheat flour
2 tbsp flax
3 tsp baking powder

1 cup quick cooking oats
1 cup chopped dried apricots
3/4 cup boiling water

2 eggs lightly beaten
1 cup milk
2 tsp grated orange rind - omit if you don't want a strong orange taste

Directions

Combine the first four ingredients in a medium bowl. In another bowl combine oats, apricots and boiling water. Let cool for 5 minutes add milk (and rind if you are using) and then eggs. Combine with dry ingredients, mix well. Then put into greased muffins tins. Fill about 2/3 full. Bake at 400 F for about 20 minutes.
