I made these tonight and oh my are they ever good! I liked them because they have vegetables, protein and no sugar! The girls liked them too. Next time I make these I am going to figure out how to cut down on the butter and I reccomend if you want to be even healthier to use egg whites.
1/2 cup melted butter let it cool before adding
2 cups pureed yams
6 beaten eggs
2 cups eggs
1 cup whole wheat flour
1 cup oats ground in blender
1 cup nuts (almonds, walnuts or pecans) ground in blender
2 tbsp baking powder
1 tsp cinnamon
1 tsp nutmeg
Beat eggs, yam, butter and milk together. Then add the rest of the ingredients and stir until well blended. Cook in a hot waffle maker.
