Zuppa Tuscana

I was grocery shopping today and I saw some fresh kale.  I bought some and the rest of the ingredients to make my favorite soup from my favorite restaurant Olive Garden.  I am so impressed with myself.  The soup is so easy and delicious!  I had my parents over for dinner and everyone loved it.  And it was easy too!

Ingredients
8 links mild italian sausage removed from casing (feel free to go for hot if you really like spice)
1 tbsp olive oil
1 1/2 diced onion
3-4 cloves garlic minced
1-2 tbsp dried pepper flakes
8 cups chicken stock (feel free to use boullion cubes or canned stock)
3-4 potatoes
4 cups chopped kale

Directions
Cook the sausage, while cooking make sure it crumbles up to look like hamburger, then set aside.  In a soup pot add the oil and onions cook until translucent and then add garlic.  And the chicken stock and potatoes.  Simmer until potatoes are soft.  If you want a thicker soup puree some of the potatoes.  Just before serving add the cream and kale.  This makes a lot of soup, I put the kale in the bottom of the bowls and then poured the soup over and let sit for a couple minutes for the kale to soften up.
